Matthew Medure’s culinary passion began in 1988 at the Pennsylvania Institute for Culinary Arts, where his natural talent and sophistication quickly set him apart. He started his career as first cook at The Café at The Ritz-Carlton in Atlanta, then flourished when he helped launch The Grill at The Ritz Carlton, Amelia Island as executive chef for seven years. Under his leadership, the restaurant received accolades from prestigious publications and earned the AAA Five Diamond Award in 1994 making it the only restaurant in Florida to achieve this honor
Now, with his brother David, he co-owns of multiple successful establishments including the flagship Matthew’s Restaurant in San Marco, Restaurant Medure, M Shack, Rue Saint Marc, Midtown Table, M Brothers at Mayo, and Zest at Mayo. Several years ago, he founded Medure Brothers Culinary Concepts, dedicated to innovative, quality cuisine, and exceptional hospitality.
